After my adventures with Swiss Meringue Buttercream icing I fell in love with meringue and decided I wanted to master a basic meringue cookie. I started with basic vanilla and made them into Halloween ghosts, which turned out pretty cute and super tasty. This spicy, warm recipe is perfect for the holidays – the chai-tea inspired flavors work equally well with a cup of coffee or tea or even hot chocolate.
I think that meringues would be the perfect cookie to take to a cookie exchange. They are unexpected and since these walk a fine line between sweet and savory, a nice change to the overly sweet traditional holiday cookies we’re accustomed to. Bonus – they are gluten and dairy free!
