In my next life, I am going to be the wife/mom/house manager that plans and knows exactly what we’re eating every night of the week. At this point in this life, I do a pretty good job of buying basic ingredients and making dinner on a whim almost every night.
Petite has really curbed our eating out habit and I’ve been trying really hard to plan better so I can be more organized. I find it so helpful to browse Pinterest for inspiration and I LOVE reading other family’s meal plans. Since I don’t usually know what we’re eating until we’re about to eat it, I thought I’d do a retrospect meal plan – a What We Ate plan, if you will and I hope it might inspire someone else.
We ate a LOT of chicken last week – kind of by accident – I like the skin on bone-in chicken breasts and they were $1.00/lb! Practically a steal! We also tend to get on kicks and eat a lot of the same food sometimes – but it works for us! Saturday night’s salad was dressed in an easy dressing – I combined raspberry peach champagne jam, olive oil, grated garlic, lemon juice, salt and pepper and tossed that with spinach and dried cherries. I topped the spinach with the chicken and served a chunk of pretzel bread with goat cheese on the side.
